Easy Easter treats




Gone are the days when I dyed eggs or even decorated for Easter. (Full disclosure! I don't decorate for Easter! I know right?!) But usually, I am traveling this time of year and to be honest, I could never really get into the bunnies or the pastels anyways. BUT, I do like that it's the turning season for warmer weather and I also very much like Easter treats.


So if you are like me and are looking for something pretty to serve for dessert on Easter Sunday or maybe something easy you can make with the kids to get into the spirit, this take on an old favourite can be all of those things!





These gorgeous little egg confections are actually the classic Christmas cookie, the Peanut Butter Ball! Or in Newfoundland & Labrador, Mice Cookies. The recipe is the exact same I've just shaped them into eggs and dipped in milk chocolate rather than semi-sweet. Adorned with a royal icing flower (yes you can even do this I promise!) they are the perfect little sweet reminiscent of retro Easter treats.

Ingredients

  • 1/4 cup melted butter

  • 1 cup peanut butter

  • 1 tsp vanilla extract

  • 2 cups icing sugar

  • 1 cup rice cereal

  • 1 1/2 cup melted chocolate chips over a double boiler (I used milk chocolate and I used a stainless steel bowl over a saucepan with about 1/2 cup of water boiling)






Instructions- Cookie

  1. Beat together melted butter, peanut butter, vanilla and icing sugar until smooth

  2. Fold in the rice cereal

  3. Roll into egg shapes instead of balls (It takes some practice but baking isn't perfect!)

  4. Freeze for 2 hours

  5. Dip in the melted chocolate. (Tip: let each one drip before putting them on new parchment paper to dry)

  6. Let harden in the fridge for 2 hours before decorating

The recipe is super easy to follow online. (I halved the icing recipe for these cookies.)


Materials: 3 Wilton gel colours (Violet, Rose Pink, Leaf Green)

3 icing bags (you can grab these at Walmart)

Icing tips: #4, #101, #66


Cheat: If you don't have access to icing bags and tips, use 3 Ziplock bags and cut 3 size slants off one corner of the bag.


Decorate how you want! Have fun, there is no right way to decorate! As long as it brings you happiness, your are doing right!
